It’s close to the A1 and the A428 so it’s very easy to get to and when you arrive at the Wyboston Lakes’ site, there are acres of free parking, a rarity in this day and age. Following signs to the brasserie leads you to a secluded haven by the golf course where diners are welcomed by friendly staff.

Operations director, Olivier Six, is delighted with the success of The Waterfront Brasserie, commenting, “When we first opened three years ago as The Waterfront Restaurant / Bar, we wanted the restaurant to become the finest in the area, and judging by its growing popularity, this ambition is beginning to be realised. The layout of the brasserie is such that it can easily cater for large parties of up to 16, and yet not lose the intimacy that makes it ideal for couples and small groups. The Waterfront Brasserie is also unusual in that it is open from 8.00am until 11.00pm with last food orders taken at 9.30pm. The long opening hours and friendly, informal atmosphere make the brasserie perfect for all occasions whether that be a business breakfast, a light brunch, a delicious lunchtime meal, afternoon tea, early evening tapas or a relaxing three course evening dinner.

Recent refurbishment of the kitchens has increased capacity and improved the facilities, enabling executive head chef, Fergus Martin, and his brigade of chefs to create exciting new dishes, so that diners have an even greater choice. The new menus draw upon both Mediterranean and British influences, using the finest seasonal and local produce wherever possible. The result is a fresh balance of flavours and textures which stimulate the senses, creating a highly enjoyable dining experience.

Whether you choose a traditional Scottish steak, authentic Thai cuisine, a classic pasta dish or a selection of tapas, all dishes are freshly cooked to order using locally grown ingredients wherever possible thus ensuring the highest quality. You won’t find standard prawn cocktails on the menu at the Waterfront Brasserie, but instead you can savour the delights of exquisite starters like hot smoked salmon with a shaved fennel, cucumber and dill salad and a citrus dressing.

Similarly, the salads really have an individuality you won’t find in most restaurants. Grilled marinated swordfish with wood-roasted Mediterranean vegetable salad and fresh rocket pesto, or smoked Gressingham duck with leaf salad, polenta chips and a warm cherry dressing would be difficult to find outside of exclusive eating houses.

To complement the new menus, an even wider selection of excellent value quality wines is now available ranging from classic French to the best of the New World vineyards.

On hot, sultry summer days you can either enjoy your meal in the air-conditioned comfort of the Waterfront Brasserie, or dine al fresco under parasols on the lakeside patio and bask in the serenity of the waterfront setting.

It isn’t just the remarkable range of food available here, but also the presentation that stands out. Under the direction of executive chef Fergus Martin, the food really does taste as good as it looks!
